🥗 Step-by-Step Recipe:

✨ Ingredients - burrito wraps:
• 1 zucchini
• 1 small green apple
• 1 leek (white part only)
• 1 shallot
• 1/2 cup soaked walnuts
• 5 Medjool dates (pitted)
• 1 tbsp ground flaxseed
• 1 tbsp psyllium husk
• Juice of 1 lemon
• 1/2 tsp Celtic salt
• 1/4 tsp cayenne pepper
• 1/4 tsp paprika
• 1/4 tsp garlic powder
• 1/4 tsp black pepper
• Hemp seeds + sesame seeds for topping

 

🌀 Directions:

1. Blend all ingredients (except toppings) in a high-speed blender or food processor until smooth and dough-like. Add a little water if needed for blending.

2. Spread the mixture evenly onto non-stick dehydrator sheets in wrap-sized silicone forms.

3. Top each wrap with hemp and sesame seeds. Use a spatula to gently press them in.

4. Dehydrate at 115°F (46°C) for 12-15 hours

5. Serve filled with raw veggies, sprouts, avocado, or eat as-is.

6. Store in the fridge for up to 5 days.

• 8-10 large romaine lettuce leaves (or collard greens) - for wraps
• 1 small cucumber, sliced into thin strips
• 1 small zucchini, julienned
• 1 small carrot, shredded
• ¼ cup sun-dried olives, chopped
• ½ cup sprouted lentils (or sprouted mung beans)
• ¼ cup fresh parsley, chopped
• ¼ shallot, thinly sliced
• 1 small leek, sliced thin

 

Base sauce -🧀 Creamy Cashew–Sunflower Cheese Sauce

🌿 Ingredients:
• ½ cup raw cashews (soaked 2-4 hours, drained)
• ½ cup raw sunflower seeds (also soaked 2-4 hours, drained)
• 2 tbsp lemon juice
• 1 tsp Celtic sea salt (adjust to taste)
• ½ cup leeks, chopped (white/light green parts)
• 3 garlic cloves
• 1 shallot, peeled and chopped
• 1 tbsp coconut aminos
• ¼ tsp cayenne pepper
• ½ tsp black pepper
• 1 tsp mustard seed powder
• ¾ cup water (start with ½ cup and increase to desired consistency)

 

🍋 Instructions:

1. Blend everything:

In a high-speed blender or food processor, combine all the ingredients and add 3/4 cup water

Blend until velvety smooth.

2. Taste and adjust:

Add more lemon juice

More water for thinner sauce

More salt, pepper, or cayenne to balance heat and flavor

🧊 Storage:
Lasts 4-5 days refrigerated in a sealed glass jar.


🌼 White Creamy Sauce (Cauliflower-Cashew Lime)
Light, tangy, cooling contrast to the savory sauce.

Ingredients:
• ½ cup raw cauliflower florets
• ½ cup raw cashews (soaked for 2-4 hours, drained)
• Juice of 2 limes
• 1 clove garlic
• ¼ tsp Celtic salt
• ¼ tsp cayenne pepper
• ½ tsp black pepper
• ½ cup filtered water (or more to thin)

Instructions:
1. Blend all ingredients in a high-speed blender until ultra-smooth and creamy.
2. Adjust water for pourable consistency.
3. Taste and adjust lime or salt as preferred.

 

 

🌯 Assembling Your Raw Vegan Burrito - “Oregon Summer”:

1. Lay your lettuce or collard leaf flat on a clean surface or plate.

2. Spread 1-2 tablespoons of the base savory sauce down the center.

3. Add a layer of zucchini, cucumber, carrots, leeks, and sprouted lentils.

4. Sprinkle with sun-dried olives, parsley, and shallot.

5. Drizzle with white cauliflower-cashew lime sauce.

6. Gently roll or fold the lettuce leaf like a burrito or taco wrap.

Step 1: Rinse
• Rinse 1 cup of lentils thoroughly under cool water to remove dust or debris.

Step 2: Soak
• Place rinsed lentils in a jar or bowl.
• Add 3 cups of water.
• Soak for 8-12 hours (overnight is ideal).

Lentils will absorb water and swell.

Step 3: Drain & Rinse
• After soaking, drain the water using a mesh lid or strainer.
• Rinse the lentils well with fresh water, then drain completely.

Step 4: Begin Sprouting
• Place the jar at a 45° angle, upside down (mouth down), in a bowl or rack to let excess water drain and air flow.

You’ll see tiny white tails (the sprout) emerge after about 24-36 hours.
